Fennel (Foeniculum vulgare) is a tall, aromatic perennial herb native to the Mediterranean, with feathery blue-green foliage, golden umbel flowers, and a distinctive anise fragrance throughout all parts of the plant. Both the bulb, foliage, and seeds are used in cooking, and it is also an important larval host for swallowtail butterflies. Starting at $3.50.

Grow in full sun; fennel requires at least 6–8 hours of direct sun daily. In NE Florida it performs year-round as a perennial herb, self-seeding freely in sunny beds and herb gardens.
Water regularly to establish; once established, fennel is drought-tolerant in NE Florida's sandy soils. Water deeply during prolonged dry spells but avoid waterlogged conditions, which cause root rot.
Plant in fertile, well-drained sandy or loamy soil. In NE Florida, amend with compost at planting. Fertilize lightly in spring with a balanced fertilizer; over-fertilizing promotes lush foliage but reduces seed and essential oil production.
