Cilantro (Coriandrum sativum) is a fast-growing cool-season annual herb grown for its fresh, pungent leaves (cilantro) and aromatic seeds (coriander). In NE Florida, sow from September through February for best results; warm spring temperatures trigger bolting. Successive sowings every few weeks extend harvest through winter and early spring. Grow in full sun to part shade. In NE Florida, cilantro is a cool-season crop planted September through February; afternoon shade can extend the harvest window by slowing bolting as temperatures warm in late winter.
Keep soil consistently moist but well-drained. Water regularly — about 1 inch per week — and avoid letting the soil dry out completely, which accelerates bolting. Mulch lightly to retain soil moisture.
Prefers rich, well-drained soil with good organic matter. Amend NE Florida sandy soils with compost before planting. A light application of balanced vegetable fertilizer at planting is sufficient; heavy feeding is unnecessary.
