Plant winter savory in full sun — at least 6 hours of direct sun daily — for the most aromatic, flavorful foliage and compact growth; in NE Florida, afternoon shade during peak summer heat can help it persist longer through the humid season.
Winter savory is drought tolerant once established; water deeply but infrequently, allowing the soil to dry out between waterings. In NE Florida's rainy season (June–September) ensure excellent drainage to prevent root rot, the primary threat to this Mediterranean herb.
Grow in sandy, well-drained soil with a slightly alkaline to neutral pH; amend heavy soils with coarse sand or gravel to improve drainage. Fertilize sparingly — a light application of balanced slow-release fertilizer in early spring is sufficient, as rich soils reduce aromatic oil concentration.
